- ½ cup old-fashioned oats
- ½ cup unsweetened almond milk or milk of choice
- ¼ cup plain Greek yogurt
- ¼ cup pumpkin puree (not pumpkin pie filling)
- ½ scoop vanilla protein powder
- ½ teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- 1 teaspoon maple syrup or honey
- 1 tablespoon chopped pecans
Directions
- Add the oats, milk, Greek yogurt, pumpkin, protein powder, spices, and maple syrup to a jar or container.
- Stir until combined. Add a little extra milk if needed to loosen the mixture.
- Cover and refrigerate overnight.
- Top with chopped pecans before serving.
02.Apple Cinnamon Greek Yogurt Bowl
When you want apple pie for breakfast but also have responsibilities.
Protein boostMix a little vanilla protein powder into the Greek yogurt.
Ingredients
- 1 cup plain Greek yogurt
- 1 small apple, diced
- 1 teaspoon cinnamon
- 1 teaspoon maple syrup
- 1 tablespoon chopped walnuts
- 1 tablespoon granola
- Pinch of nutmeg
Directions
- Place the diced apple in a microwave-safe bowl.
- Sprinkle with cinnamon and microwave for 60–90 seconds, or until slightly softened.
- Add the Greek yogurt to a serving bowl.
- Top with warm apples, maple syrup, walnuts, granola, and nutmeg.
03.Turkey & Sweet Potato Chili
This hearty chili is perfect for meal prep and tastes even better the next day.

Ingredients
- 1 pound lean ground turkey
- 1 medium sweet potato, peeled and cut into ½-inch cubes
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes
- 2 cups low-sodium chicken broth
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- Salt and pepper to taste
Directions
- Brown the turkey in a large nonstick pot over medium heat, breaking it into crumbles.
- Add onion, pepper, and garlic. Cook for about 4 minutes.
- Add the remaining ingredients.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes, or until the sweet potato is tender and the turkey reaches 165°F on a food thermometer.
- Adjust seasoning before serving.
04.Sheet-Pan Maple Dijon Chicken & Vegetables

Ingredients
- 1½ pounds boneless skinless chicken breast or thighs
- 2 cups Brussels sprouts, halved
- 1 large sweet potato, cut into ½-inch cubes
- 1 small red onion, chopped
- 1 tablespoon olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon pure maple syrup
- 1 teaspoon garlic powder
- ½ teaspoon dried thyme
- Salt and pepper to taste
Directions
- Preheat oven to 425°F. Line a large rimmed sheet pan with parchment paper or lightly grease it.
- Arrange chicken and vegetables on the pan in a single layer. Use evenly thick chicken pieces so they cook at a similar rate.
- Mix olive oil, Dijon mustard, maple syrup, garlic powder, thyme, salt, and pepper.
- Drizzle over the chicken and vegetables and toss to coat.
- Bake for about 25–30 minutes, or until the chicken reaches 165°F in the thickest part and the vegetables are tender. Larger chicken pieces may need longer; remove finished pieces while the vegetables continue cooking if needed.
05.Creamy Butternut Squash Soup
Creamy, cozy, and made with Greek yogurt instead of heavy cream.

Ingredients
- 1 medium butternut squash, peeled and cubed (about 6 cups)
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups low-sodium vegetable or chicken broth
- ½ cup plain Greek yogurt
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- Salt and pepper to taste
Directions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook for 4–5 minutes.
- Add garlic and cook for another minute.
- Add squash, broth, cinnamon, nutmeg, salt, and pepper.
- Simmer for about 20–25 minutes, or until the squash is tender.
- Remove from heat and blend until smooth with an immersion blender. If using a standard blender, let the soup cool slightly and blend in small batches with the lid vented according to the blender instructions.
- Whisk a little warm soup into the Greek yogurt, then stir the yogurt mixture into the pot just before serving. Avoid boiling after adding the yogurt.
06.Harvest Chicken Power Bowl

- 1 pound cooked grilled or roasted chicken breast, sliced
- 2 cups cooked quinoa

- ¼ cup dried cranberries
- ¼ cup chopped pecans
- ¼ cup crumbled feta or goat cheese
Maple Dijon dressing
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon maple syrup
- Salt and pepper to taste
Directions
- Divide the cooked quinoa between four bowls.
- Add chicken, Brussels sprouts, sweet potato, apples, cranberries, pecans, and cheese.

Ingredients
- 2 acorn squash
- 1 pound lean ground turkey
- ½ small onion, diced
- 1 apple, diced
- 2 cups baby spinach
- ½ teaspoon dried sage
- ½ teaspoon garlic powder
- ¼ teaspoon cinnamon
- ¼ cup dried cranberries
- Salt and pepper to taste
Directions
- Preheat oven to 400°F.
- Cut the squash in half and remove the seeds.
- Place cut-side down on a lined baking sheet and roast for 30–45 minutes, or until the flesh is fork-tender.
- Meanwhile, brown the turkey with onion in a nonstick skillet, breaking it into crumbles.
- Add apple, spinach, sage, garlic powder, cinnamon, cranberries, salt, and pepper.
- Cook until the spinach wilts, the apple begins to soften, and the turkey reaches 165°F on a food thermometer.
- Turn the roasted squash cut-side up and fill each half with the turkey mixture.
- Return to the oven for another 10 minutes, or until heated through.
08.Slow Cooker Chicken Tortilla Soup

Ingredients
- 1½ pounds thawed boneless skinless chicken breasts
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup frozen corn
- 1 can (14.5 ounces) diced tomatoes
- 1 small onion, diced
- 3 cups low-sodium chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Juice of 1 lime
Directions
- Add everything except the lime juice to a slow cooker.
- Cover and cook on LOW for about 6–7 hours or HIGH for 3–4 hours, until the chicken reaches 165°F in the thickest part.
- Remove the chicken and shred it with two forks.
- Return the chicken to the soup.
- Stir in fresh lime juice before serving.
09.Cinnamon Apple Protein Muffins

Ingredients
- 1½ cups oat flour
- ½ cup vanilla protein powder
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon baking soda
- 2 eggs
- ½ cup unsweetened applesauce
- ½ cup plain Greek yogurt
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- 1 apple, finely diced
- 2–4 tablespoons milk, only if needed to loosen the batter
Directions
- Preheat oven to 350°F.
- Mix the oat flour, protein powder, baking powder, cinnamon, and baking soda in one bowl.
- Whisk eggs, applesauce, Greek yogurt, maple syrup, and vanilla in another bowl.
- Combine the wet and dry ingredients. If the batter is very stiff, add milk a tablespoon at a time until thick but spoonable.
- Fold in diced apple.
- Divide batter between 12 lined or greased muffin cups.
- Bake for about 18–22 minutes, or until a toothpick inserted into the center comes out clean. Let cool before storing.
10.Pumpkin Pie Protein Bites
A no-bake fall snack for when you want something sweet without committing to an entire pumpkin pie.
Texture tipIf the mixture feels too wet, add a little more oats or protein powder. If it’s too dry to hold together, add a splash of milk.
Ingredients
- 1 cup old-fashioned oats
- ½ cup natural peanut or almond butter
- ⅓ cup pumpkin puree (not pumpkin pie filling)
- ½ cup vanilla protein powder
- 1 tablespoon maple syrup
- 1 teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- 2 tablespoons mini dark chocolate chips
Directions
- Mix all ingredients together in a large bowl.
- Refrigerate the mixture for about 20 minutes.
- Roll into about 16 small bite-sized balls.
- Store in an airtight container in the refrigerator.
